Dr. Jeri’s GF Orange and Grand Marnier Mini-Muffins

Dr. Jeri’s Orange and Grand Marnier Mini- Muffins
3/4 cup brown sugar
1 stick butter
¼ teaspoon salt
½ cup frozen orange juice concentrate (thawed)
2 tablespoons Grand Marnier Liqueur *
½ teaspoon orange extract
1 teaspoon vanilla
1½ teaspoons baking powder
1/2 cup Better Batter GF flour
3/4 cup blanched almond flour
Muffins: Combine the sugar, butter, salt and eggs then beat till fluffy. Mix in the remaining wet ingredients. Fold in the baking powder and Better Batter then beat for a minute or two till the mixture thickens. Fold in the almond flour then mix till smooth.
Line 3 dozen mini-muffin tins with paper liners and fill with batter.
Bake at 350° for 15-20 minutes
Cool the mini muffins on plates then dip the tops in either ganache or orange glaze.
Dark Chocolate Ganache with Grand Marnier and Orange
1/3 cup heavy cream
1/3 cup dark chocolate chips
1 tablespoon sugar
1 tablespoon butter
¼ teaspoon instant coffee
1 teaspoon grand Marnier Liqueur
½ teaspoon orange extract
Combine the first 5 ingredients in a microwave safe bowl. Microwave for 30 seconds then stir for a minute. If the chocolate is still not melted, microwave for another 15 seconds. Stir. When the chocolate is well blended, stir in the Grand Marnier and orange extract. Allow the mixture to cool for 10-15 minutes then dip the top of each muffin in the ganache.
Orange Glaze (for those who don’t like chocolate)
2 tablespoons frozen orange juice concentrate
¼ cup powdered sugar
Stir to combine. Dip the top of each muffin in the glaze.
