Gluten-Free Microwave Brownies- Recipe
I’ve been craving brownies for weeks, but didn’t want to heat up the kitchen and didn’t want to have a 13 X 9 pan full of temptation so I came up with this:
Jeri’s GF Microwave Brownies (recipe)
1 tablespoon room temperature butter (optional)*
1 egg
¼ cup sour cream
¼ teaspoon vanilla
1/4 cup sugar
A pinch of salt
¼ teaspoon instant coffee powder
2 tablespoons unsweetened coco powder
2 tablespoons Better Batter GF flour
¼ teaspoon baking powder
¼ cup blanched almond flour
3 tablespoons chocolate chips
a few broken walnuts or pecans (optional)
Put the sugar, salt, coffee powder, coco powder and Better Batter in a microwave safe bowl and mix with a fork till well combined. Add the butter, egg, sour cream and vanilla then mix with a fork till smooth. Mix in the almond flour. Mix in the nuts if you’re using any.
Sprinkle the chocolate chips over the top then gently press them into the batter with your fingertips.
Wipe the upper portion of the bowl clean with a damp paper towel.
Microwave at 50% power for 2 minutes then 30-60 seconds on Hi
Serves 2-4 (leftovers can be frozen to aid willpower)
*I’ve made it with and without the butter. It’s moist and tasty either way, richer with the butter.
