Low Carb Cauliflower Mac & Cheese

I was having an overwhelming craving for mac and cheese, but didn’t want to raise my blood sugar OR wash pots and pans, so I threw this together and it was yummy!


RECIPE: Lazy Days Cauliflower “Mac” and Cheese

1/3 cup heavy cream

1 pat butter
2 ounces extra sharp cheddar finely grated
1 slice American cheese (Borden is GF)
1 pound bag frozen riced cauliflower
(for more interesting flavor you might add some Gouda or Parm. Tearing a thin slice of smoked Gouda and scattering it in just before serving will give a vegetarian illusion of bacon flavor)


Spread the cauliflower on a plate and microwave till done (about 9 or 10 minutes)


In the mean time, grate the cheddar and tear the American cheese into small pieces


When the cauliflower is almost done, pour the cream into a soup bowl and microwave for 30-60 seconds till it comes to a simmer.


Add the butter and cheese then stir to melt. Warm in the microwave if need be for 10 seconds or so. Taste to see if it needs more cheese or salt to suit your taste.


Pour the sauce over the veggies and mix to coat.
