Super Rich Gluten-Free Microwave Brownies- recipe
Jeri’s Super Rich Gluten-Free Microwave Brownies
I’ve been thinking about how to make my microwave GF brownies taste more like the ones I bake (which are fabulous) After a few tweaks, I came up with this recipe. It’s richer and more chocolaty than the last version, but it does have one more step and requires washing one more small bowl. (I HATE doing dishes) I think it’s worth the extra effort.
Recipe:
1 tablespoon butter
¼ cup chocolate chips*
1/4 cup sugar
A pinch of salt
¼ teaspoon instant coffee powder
1 tablespoon unsweetened coco powder
1 tablespoon Better Batter GF flour
¼ teaspoon baking powder
¼ cup blanched almond flour
1 egg
¼ cup sour cream
¼ teaspoon vanilla
3 tablespoons chocolate chips
Optional: ¼ cup walnut or pecan pieces**
Put the butter and ¼ cup chocolate chips in a small dish. Microwave on High for 30 seconds then let it sit while you mix the batter.
In a microwave safe soup bowl place the sugar, salt, baking powder, coco powder, Better Batter and almond flour and coffee then mix with a fork till well blended. Add the egg and sour cream then, using a fork, mix till smooth.
Stir the chocolate/butter mixture. If the chocolate is not fully melted, microwave for another 15-20 seconds then stir again. Finally, pour the chocolate/butter mixture into the batter and mix till well blended.
If you are going to add nuts, stir them into the batter then sprinkle the 3 tablespoons of chocolate chips over the top then gently press them into the batter with your fingertips.
Wipe the upper portion of the bowl clean with a damp paper towel.
Microwave at 50% power for 2 minutes then 1-2 minutes in 30 second intervals on Hi till center will bounces back to the touch and the edges just begin to pull away from the bowl.
*Cooking time is longer if you add nuts.
* I use 60% chocolate chips.
Serves 2-4 (or more)
I wrap the leftovers in plastic wrap and a zip lock bag and freeze. then, when I have a craving, I just thaw out a small wedge. (I actually get at least 8 servings from this tiny little cake.)
